The new year is just days away! The saying really is true: the older you get, the faster the years fly by!
As you look forward to a fun New Year’s celebration, you know you’ve gotta have some dip (and chips!)! What’s a party without a dip?
You want to make it from scratch so that you’re in total control of the ingredients, and you also need to cut out the dairy or the mayo. But you’re kinda over all the tedious, gourmet dishes you slaved over during Thanksgiving and Christmas. Now you just need some easy deliciousness to throw together on the fly!
I’ve got you covered! Whip up this easy, dairy-free spinach dip, and walk into that party with a big smile on your face!
Easy, Dairy-Free Spinach Dip Ingredients
Onion: I used red onion. Yellow onion would be another great choice.
Sunflower Oil: This is the oil I used, but you could probably use avocado oil or a similar neutral oil instead.
Salt: Sea salt or pink Himalayan salt would be the best options. If you are using regular table salt, you may need to use a little less salt.
Ground Cumin
Black Pepper
Garlic Powder
Cashew cream: This is the ingredient that gives you that creaminess you’re lacking from dairy or mayo. Get the super EASY recipe here.
Spinach: I used fresh, raw spinach for this recipe. We don’t have frozen spinach where I live, so I haven’t tried it! Baby spinach would be ideal in this recipe, because it will have tender stems and won’t have as much of a bitter taste.
Kitchen Supplies You May Need
- a cutting board
- a good knife
- a bowl
- a skillet
- a scraping spatula
- a food processor, grinder, or high-powered blender
- measuring cups and spoons
How to Make Easy, Dairy-Free Spinach Dip
Now let’s make it! First, chop your spinach into small pieces and place in a bowl. Remove and discard any tough stems if needed.
Next, heat a skillet on low heat and add a neutral oil, such as sunflower oil. While the skillet is heating, dice your onion.
Once the skillet is hot, add the 1/2 teaspoon of salt to the spinach bowl and add the 1 teaspoon of salt, ground cumin, garlic powder, and black pepper to the skillet and stir for a few seconds. Make sure you have your spices ready with your measuring spoon, because this step is fast. You don’t want your spices to burn.
Quickly thereafter, add the diced onion to your skillet and cook on low heat until it starts to become golden brown in color. Stir it frequently so the onion doesn’t burn. If you’re in a hurry and don’t mind extra fat, you could add a larger amount of oil, heat the skillet to a higher (mediumish) temperature, and the onion will cook really fast.
While the onion is cooking, add cashew cream to a food processor, grinder, or high-powered blender.
Once the onion is finished cooking, add it to the cashew cream and blend until well incorporated. It doesn’t have to be completely smooth.
Next, add the spinach to the skillet and cook until wilted. Transfer the cashew cream-onion mixture to the bowl and fold in the wilted spinach.
Good job! Grab some chips or veggies and dig in!
Note: This dip tastes best when it’s just been freshly cooked and still warm.
