One of my favorite childhood Christmas treats was Little Debbie Christmas Gingerbread Cookies. Melt in your mouth, delectable, gobble-it-up deliciousness that just leaves you craving more and more. I could definitely eat a whole box in one sitting and wish I had bought another box. (Shh! No judging allowed here!)
It’s no secret that these insanely delicious treats are horribly unhealthy. And, well, in a world full of temptation, we just have to resort to taking matters into our own hands!
This new Christmas recipe is my spin on Little Debbie Gingerbread Cookies, but in a healthy, homemade frappuccino form! I hope you’ll love it as much as I do!
Healthy, Homemade Gingerbread Frappuccino Ingredients
Cashew cream: This is the ingredient that makes this drink taste like it’s full of dairy! Find this super EASY recipe here.
Water or Coffee: Here’s where coffee lovers and coffee haters can part their ways and fully enjoy the same drink!
Honey: This lovely, natural sweetener makes the drink come alive! It’s not the typical molasses you’d find in a gingerbread recipe, but, by golly, it gets the job done!
Salt: Sea salt or pink Himalayan salt (what I use) would be good choices here. If you use regular table salt, you may have to use a little less salt in this recipe, as it tends to be “saltier” than sea salt or pink Himalayan salt.
Ginger Powder: Certainly can’t have gingerbread without our ginger!
Cinnamon Powder: Ooo, wee! This stuff spreads all the warm and cozy goodness into this frappe!
Clove Powder: A pinch gives the perfect kick to take your drink up to gingerbread worthy level!
Vanilla Extract: Did you know that if you’re a frequent baker, you could probably save yourself a lot of money and EASILY make it yourself? All you need is vodka or bourbon, vanilla beans, and a little time!
Ice: The ingredient that turns a weird combination into a delicious frappuccino!
A Note on the Sweetness Level
We all know we’re not all the same. You like it this way, she likes it that way. You may not like your drinks very sweet. If that’s you, start with one or two tablespoons of honey and taste the mixture before you add in the second cup of ice. If you find you want it sweeter, add an extra teaspoon or tablespoon until you get the sweetness level you prefer. Do keep in mind that the second cup of ice will “water down” the drink and dilute the flavors a bit, so you may have to get it a little sweeter than you think. You can add more honey after the second cup of ice, but it would be much better to add it before if possible!
Kitchen Supplies You May Need
- high-powered blender
- espresso machine (if doing an espresso shot)
- coffee maker (if doing drip coffee)
- measuring cups and spoons
- scraping spatula
Let’s Make It
First, make sure you have cashew cream on hand. Next, add all the ingredients to a high-powered blender (except for 1 cup of ice) and blend it for about a minute or two on low to medium speed. The timing all depends on the power of your blender. If you have a really powerful blender, you may want to blend it for less time or on a lower speed. After the ingredients are blended well, add in the last cup of ice and blend it until you can’t hear the ice moving around in the blender.
You want the mixture to easily pour out of the blender, but you don’t want it to be a super watery texture. You also don’t want it to be so thick that it won’t come out of the blender. You want it somewhere in the middle–a chunky, icy texture is what I like to call it. That’s what you’re going for.
If yours got too watery, add more ice and blend a little longer. The flavors will not be as strong, but you can still enjoy the drink. If yours is too thick, blend it a little longer until it becomes pourable.
Finally, add some coconut or dairy cream if you have it!

How to Use These 3 Dishes
Use the 1/4 cup measuring cup:
- Two 1/4 cups of cashew cream
- One 1/4 cup of water or coffee
Use the tablespoon for honey.
Use the 1/4 teaspoon:
- One 1/4 teaspoon plus half 1/4 teaspoon of sea salt
- Two 1/4 teaspoons of ginger powder
- Two 1/4 teaspoons plus half 1/4 teaspoon of cinnamon powder
- One 1/4 teaspoon of vanilla extract
Use your fingers to measure a pinch of clove powder.

Ingredients
- 1/2 cup cashew cream
- 1/4 cup water OR 1/4 cup drip coffee 0R 1 shot of espresso (room temp or chilled)
- 3 tablespoons honey*
- 1/4 teaspoon plus 1/8 teaspoon sea salt
- 1/2 teaspoon ginger powder
- 1/2 teaspoon plus 1/8 teaspoon cinnamon powder
- pinch of clove powder
- 1/4 teaspoon vanilla extract
- 2 cups ice
Instructions

- Make sure you have cashew cream on hand.

- Add the reserved cup of ice and blend until you can't hear the ice moving around anymore. You want the mixture to be pourable. It shouldn't be watery or too thick to come out of the blender. You want it somewhere in the middle--a chunky, icy texture is what I like to call it. That's what you're going for.**
- Add some dairy or dairy-free whipped cream if you have it!
- Serve immediately and enjoy!
