There’s nothing quite like the smell of a pumpkin pie baking away in the oven. It means cool, fall air has arrived and special get-togethers with family and friends are just around the bend. Even those folks who aren’t particularly fond of pumpkin pie appreciate the sentiment of this treasured family heirloom. As you anxiously await the unfolding of this new season, let these cool, fall treats whisk you off into a dream land filled with happy fall memories.
These creamy delights happen to be dairy-free. But let me tell you, I promise you won’t be missing out on anything! I dare you to invite your dairy-eating friends over to partake with you. Not one soul will be pining away for dairy!
What, might you ask, is the secret ingredient that so beautifully replaces dairy in this recipe? It’s not coconut, my friend. Sure, coconut milk is the go-to dairy replacement for all things treats. But what if I told you there’s something even better that won’t leave that coconut taste behind?!
Cashew cream. Smooth, creamy, buttery cashew cream. Not cashew milk, cashew cream. This delicious kitchen staple is extremely easy to make in your home (check out my easy recipe here), and it’s so good, it’ll knock your socks off! Vegans, dairy-free folks, and everybody else will clap their hands in delight over this delectable addition to dishes!
These popsicles are not only creamy; they are made with real, whole foods. No weird names, no fake ingredients, and no refined sugar. Just real food. These nostalgic treats are chock full of pumpkin! In fact, pumpkin is the main ingredient by far! Alongside this vegetable, you get creaminess and healthy fat from cashew nuts. Next, these popsicles are sweetened with honey and spiced with cinnamon, vanilla, and pumpkin spice. Finally, an egg yolk is added to give these popsicles an extra creamy boost and richer flavor. This is one more dessert you can feel good about serving your family, especially your kids!
Now let’s get down to the process. How do we make these satisfying treats?
First, you’re going to blend all of the ingredients together. This is really important. Do not skip this step! Sometimes pumpkin puree can leave a really undesirable, chalky texture. Blending it ensures that these popsicles will have a smoother texture you will enjoy!
Next, you’ll transfer your popsicle mixture to a small saucepan and cook it on low to medium heat for a few minutes. Make sure to stir continuously so the mixture does not stick to the bottom of the pan and so the mixture doesn’t splash out of the pan! This step is only intended to pasteurize the egg yolk. Based on what you think is best, you can choose to omit this step if you’d like. If your eggs come from a reputable source and you feel ok consuming raw eggs, then you do you! Do what you think is best for you and your family!
Finally, making sure the mixture is cooled down, you can place the popsicle mixture in popsicle molds and place them in the freezer. (If you have good quality silicone molds, you most likely don’t have to cool the mixture down at all.) Leave them in the freezer overnight or until the popsicles become solid. Once solid, take out a popsicle from its mold and relish the fall season that is now before us!
Creamy Pumpkin Pie Popsicles (Dairy-Free)
The iconic pumpkin pie all wrapped up in the most delicious frozen treats! These creamy pumpkin pie popsicles are made with healthy, wholesome ingredients, so you can skip the holiday guilt and serve these to your family on the regular!
Ingredients
- 1 cup pumpkin puree (purchase in a can or make it yourself)
- 1/2 cup cashew cream (click for SUPER EASY recipe)
- 5 tablespoons honey
- 1 egg yolk (can omit if needed*)
- 1/4 teaspoon pumpkin spice
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Make sure you already have cashew cream on hand.
- Place all ingredients in a blender and blend for 2-3 minutes until the mixture is very smooth. Do not skip this step! This helps make sure the pumpkin puree does not leave behind a chalky textured popsicle!
- Transfer the mixture to a saucepan and cook on low to medium heat for 2-3 minutes. Stir continuously to keep mixture from sticking to the pan and to keep mixture from flying out of the pan! The purpose of this step is only to pasteurize the egg yolk. If you have an egg from a reputable source and feel comfortable eating raw eggs, you can make the personal decision to omit this step. Do what you believe is best for your family.
- Allow the mixture to cool down. If you have a good quality silicone mold, you can most likely skip this step (like I do).
- Pour the mixture into popsicle molds and place in the freezer. Freeze overnight or until the mixture is solid.
- Once solid, take out a popsicle from its mold and relish the fall season that is now before us! If you're having trouble removing a popsicle from your mold, run the bottom of the mold under lukewarm water for a few seconds.
Notes
* You can omit the egg in this recipe if you need to make this vegan; however, take note that it will slightly alter the texture and flavor of these popsicles.
