I was standing there, finely grating carrots. I was determined to use up the carrots, as well as to get more veggies in my family’s diet. But this just wasn’t cutting it. I had to take what seemed like years of my life grating carrots or had to peel, chop, cook, and blend them to add into recipes.
But then a lightbulb went off in my head. If we can use raw, shredded carrots in baked goods, well we can use a raw puree. Could I just throw some roughly (and I mean “I’m too busy for this” rough!) chopped carrots into a blender with some water and make a decent puree to add to dishes?
Yep! I sure could and did. And, oh, was I so happy. No more wasting my life away just in hopes of using up carrots or trying to sneak them into my family’s food. Blessed raw carrot puree was born.
What is Raw Carrot Puree?
Normally carrot puree involves peeling and chopping carrots, cooking them (usually by boiling or steaming), and blending them to form what we would think of as “baby food.” And then this would be eaten as a dish on its own.
Raw carrot puree, on the other hand, skips the cooking step. The carrots are peeled, chopped, and blended with water. This is not meant to be eaten on its own.
What Can I Do with It?
This kind of carrot puree is meant to be a sneaky addition to foods. You can put it in baked goods like pancakes, muffins, bread, and more. This would serve as a replacement for some of the liquid in your recipes. You can add it to snack foods, like crackers. Or throw it in your homemade dog food!

How Do You Make Raw Carrot Puree?
First, peel and roughly chop your carrots. You’ll need 4 cups of chopped carrots, which may be about 6-8 large carrots.
Next, place your chopped carrots and 1 1/4 cups water in a high-powered blender or food processor.
Blend until it’s as smooth as it’s going to get. This will never be as smooth as a cooked carrot puree. It will be “smooth” with a bit of a chalky/gritty texture.
Finally, grab your scraping spatula; scrape out every last drop of this easy, sneaky veggie gold; and place it into a storage container for later use in recipes. This will keep for about 1 to 1.5 weeks in your refrigerator.
