Not a coconut fan? Indulge in these creamy, dairy-free strawberry popsicles that are sweetened with honey.
Have you ever scoured the dairy-free ice cream and novelties section at your local grocery store, looking for wholesome ingredients and no coconut? Well, I have. And it was almost impossible to find dairy-free frozen treats without some kind of coconut oil/milk or questionable additives on the ingredient list.
Man, oh man, am I sure glad I came into contact with cashew cream. It really is possible to have delicious novelties like these creamy, dairy-free strawberry popsicles without coconut and man-made additives.
I’m especially thankful now, because these days I can’t even get my hands on good dairy ice cream or novelties at my local stores, let alone dairy-free options.
Bring on the easy peasy, homemade, strawberry goodness!
Creamy, Dairy-Free Strawberry Popsicles Ingredients
Strawberries: You can use strawberries that are or aren’t very sweet. You can simply play around with the amount of honey in this recipe to adjust the sweetness level. See the note at the bottom of this post.
Cashew Cream: This is nothing more than blended up cashews. Get the SUPER EASY recipe here.
Honey: Pure, raw honey would be ideal if you can get your hands on it! Any honey will do, though!
Lime juice
Salt: Sea salt or pink Himalayan salt (I use pink Himalayan salt) would be the healthiest options.

How to Make Creamy, Dairy-Free Strawberry Popsicles
First things first, make sure you have this cashew cream on hand! (It’s SO EASY to make, and you can go the long route or whip it up using the fast method.)
Once you know you’ve got cashew cream, take your strawberries and puree them with a blender, grinder, or food processor.
Transfer your strawberry puree to a bowl and add the cashew cream, honey, lime juice, and salt. Stir until ingredients are nicely combined.
Next, pour or spoon the mixture into a popsicle mold(s) and place it in the freezer.
Freeze the mixture for at least 6 hours, or until the popsicles are frozen solid.
Once hardened, remove the popsicles from the mold(s), and place them in a freezer-safe container if not eating immediately.
Note: If you’re having trouble removing a popsicle from your mold, run the bottom of the mold under lukewarm water for a few seconds.
A Note on the Sweetness Level
Everyone has a different idea of how sweet a dessert should be. Strawberries also tend to vary in sweetness. Some are so juicy and sweet, and others are not very sweet at all. Most of the strawberries I can get my hands on here are not very sweet.
The good thing is that the sweetness level in this recipe can be a bit altered according to preference.
If you have really sweet strawberries, you may want to go with 3 tablespoons instead of 4. If you have bland strawberries, you may want to keep the honey level as is or make it even sweeter.
To adjust this, you can taste the mixture before it goes into the freezer; however, you do need to keep in mind that the sweetness level will go down a good bit after being frozen. If you’re not sure about what to do, I would recommend making the recipe as written (you could make just half of the recipe) to see and then go up or down on the honey level after you’ve tasted it in its frozen form.
Do keep in mind that honey does help make the popsicles creamy, so you don’t want to go too low on the honey!
